It’s made up of multiple muscles that have great intramuscular fat, texture, and FLAVOR! The vibrant, rich red color is indicative of a healthy, active life. Low and slow cooking and/or grinding is required to produce tender textures, but it is worth every bit of effort. It’s also a great primal to source if you’d like to try your hand at home butchery.
